Low-Fat Tuesday Recipe of the Week: Chicken Parmesan

Super Simple Chicken Parmesan
Serves: 2

Ingredients
– 2 boneless, skinless chicken breasts
– 1/2 cup shredded part-skim mozzarella cheese
– 1 tablespoon grated Parmesan cheese
– ~2 cups marinara sauce
– cooking spray
– salt and pepper

Preparation
1. Preheat the oven to 400 degrees.
2. Season chicken breasts with salt and pepper to taste.
3. Spray cooking spray into small glass baking dish, and also both sides of chicken breasts.
4. Place chicken breasts in dish and bake until cooked through (about 15 mins).
5. Top chicken with marinara sauce and then mozzarella and Parmesan cheese.
6. Return to oven and bake until cheese is bubbling (about 10 mins).

Tips
– Season chicken breasts with a light sprinkling of garlic powder and dried oregano for more flavor.
– A few shakes of red pepper flakes easily dresses up the marinara sauce.
– If you don’t have Parmesan, don’t worry, it can be omitted from the recipe! Provolone cheese is also an easy substitute for mozzarella.
