Recipe of the Week: Healthy Spaghetti and Meatballs

Recipe of the week

This week’s recipe is for healthy spaghetti and meatballs. Make sure to choose whole-wheat spaghetti for a well-rounded meal full of lean protein, fiber, and healthy veggies.

Turkey Meatballs (serves 4-6)

Ingredients

? cup plain dried bread crumbs

? cup chopped flat-leaf parsley

2 large eggs, lightly beaten

2 tbsp milk

? cup grated Romano cheese

? tsp salt and pepper

1 lb ground turkey

? cup extra virgin olive oil

Preparation

  1. In a large bowl, stir together bread crumbs, parsley, egg, milk, ? cup cheese and salt and pepper.
  2. Add the turkey and gently stir to combine (do not overwork meat).
  3. Shape the meat mixture into bite-size balls.
  4. In oven, bake at 350 degrees for about 15-20 minutes depending on the size of meatballs.

Marinara Sauce (makes: 2 quarts, serves 4 over pasta)

Ingredients

? cup extra virgin olive oil

2 small white/yellow onions, finely chopped

2 garlic cloves, finely chopped

2 celery stalks, finely chopped

2 carrots, peeled and finely chopped

? tsp salt and pepper (+ more to taste)

2 32-oz cans crushed tomatoes

2 dried bay leaves

Preparation

  1. In a large pot heat the oil over medium-high heat. Add the onions and garlic. Saut? until the onions are translucent (about 10 mins).
  2. Add the celery, carrots, and ? tsp each of salt and pepper. Saut? until the vegetables are soft (about 10 mins).
  3. Add tomatoes and bay leaves. Simmer uncovered over low heat until sauce thickens (about 1 hour).
  4. Remove and discard bay leaves. Season with salt and pepper to taste.
