There is always that certain restaurant you save for special occasions — Valentine's Day, graduation or your parents coming to visit. It's the restaurant that if you had the money, you would eat at on a regular basis. If the Capitol Chop House is not this restaurant for you, then it should be. After eating at this steakhouse once, it is sure to be your favorite restaurant in Madison — unless you're a vegetarian, of course.

The Capitol Chop House is located on the first floor of the Hilton on East Wilson Street. Oversized booths outline the restaurant while tables fill the center. The wait staff completely has its act together and is very professional. They are very friendly, extra polite and do their best to ensure that you have an excellent meal. The restaurant is quiet, making it easy to relax with a glass of wine and have a conversation.

The food, though limited in selection and creativity, is excellent at the Capitol Chop House. They specialize in steaks, but the menu does offer fish and chicken dishes as well. They have a large assortment of appetizers ranging from muscles, to shrimp cocktail to salads. The Capitol Chop salad is good starter because it is on the lighter side but very tasty for $6. Chopped iceberg lettuce (which has become fashionable again, it seems) with bacon, tomatoes and blue cheese fit together in a perfect circle that fills the plate and appeals to the eye and stomach.

The tenderloin filet is my favorite entree. Steaks range from $22 to $38. It is worth the price, because it's always cooked to perfection and the meat is fantastic. It is served a la carte, so ordering a side such as the garlic smashed potatoes to share is a nice addition. The restaurant offers an extensive wine menu, which they are happy to help you choose from. The martini menu is also unusually thorough.

If you are not about to roll over from being so full, the Chop House has delicious deserts. I tasted the chocolate peanut butter bombe, which consisted of peanut butter mousse on top of flourless chocolate cake with a peanut butter center. That sounds excessive, but it may have been the most exquisite food I've ever tasted.
